Blue Sky Muffins

These Blue Sky Muffins is a great, tasty snack to have around. A treat that will not spoil your healthy eating!

Ingredients:

3/4 cup sugar                                                1/3 cup brown sugar
2  1/4 cups all-purpose flour                      1 tablespoon ground cinnamon
1/2 teaspoon ground cardamom              2 teaspoons baking soda
1/2 teaspoon salt                                          1/2 cup shredded sweetened coconut
3/4 cup raisins / dried cherries                   1 grated apple
1 cup diced pineapple                                  1 cup grated parsnip
3/4 cup chopped pecans or walnuts          3 large eggs                                   
1 cup canola oil                                              1 teaspoon vanilla extract
1 cup grated carrots

 

Directions:

Heat oven to 350 degrees.   In a large bowl, whisk together sugars, flour, cinnamon, cardamom, baking soda and salt. Add coconut, raisins, apples, pineapple, carrots, parsnips, and nuts, stirring to combine

In another bowl, whisk eggs, oil, and vanilla together. Scrape this mixture into bowl of dry ingredients and stir to combine.

Place batter in muffin pans lined with paper or lightly oiled, filling to a bit more than ¾ full. If you have a sweet tooth ( like me ) you can sprinkle a little bit of raw sugar on the tops

Bake until a wooden toothpick inserted in center comes out clean, around 35 minutes. Let muffins cool for 15 minutes before taking them out of the pans.
