My family loves this nutrient-dense dish. It works well as a side for breakfast or dinner. The coconut oil gives it a sweet and rich flavor.
Cut the peeled veggies in chunks that fit in food processor opening. Using large shredding blade, shred all veggies in food processor. Heat large skillet on medium high heat. Add coconut oil. When oil is hot, place shredded veggies in one thick layer in skillet. Cook without stirring for 5 min. Flip sections of veggies until all turned. Cook additional 3-4 min, without stirring. Add salt and pepper.
Delicious served with poached eggs or with grilled chicken breasts. Enjoy!
